    Observation: Crab meat (50F -discarded), milk (50F - discarded) and maccaroni & cheese (46F) were observed at improper cold holding temperature inside the cook's 2-dr counter refrigerator.
    Correction: Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under section 3-501.19, and except as specified under paragraph (B) of this section, time/temperature control for safety food shall be maintained at 5ºC (41ºF) or less. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 5ºC to 57ºC (41ºF to 135ºF) too long.     Observation: The handwashing sink located by linen storage shelves was blocked by a pile of chemical containers, used for dish washing and is not maintained so that it is accessible at all times for employee use.

Facilities must be maintained in a condition that promotes handwashing and restricted for that use.     Correction: Except when washing fruits and vegetables as specified under 3-302.15 or as specified in paragraph D of this section, food employees may not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment.

    Observation: Observed dish machine not sanitizing multi-use utensils and dishware properly. When tested with strip no sanitizer was available. Sanitizer bucket was empty. New container was installed.
    Correction: Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning. Sanitization is accomplished after the warewashing steps of cleaning and rinsing so that utensils and food-contact surfaces are sanitized before coming in contact with food and before use.

Hard-to-clean areas could result in the attraction and harborage of insects and rodents and allow the growth of foodborne pathogenic microorganisms.     Observation: The handwashing sinks, the one compartment sink, and the three compartment sink are no longer sealed to their adjoining walls.
    Correction: Equipment that is fixed because it is not easily movable shall be installed so that it is: (1) Spaced to allow access for cleaning along the sides, behind, and above the equipment

    Observation: The three door counter refrigerator middle door gasket is damaged. The right four drawer refrigerator is reading 50 F and a little bit of ground beef was found stored in the equipment. No food should be should in this unit unless it can hold foods at 41 F or below. The dessert prep refrigerator left door was found ajar. The bottom shelf of the counter table in-between the bread oven and the one compartment sink is rusty. The salad prep refrigerator has some tape on it's left door handle and right exterior panel.

    Observation: The back flow prevention device to the garbage disposal is not in maintained good repair. There is a water leak under the dish sprayer sink area. The built in three compartment sink stoppers are not retaining water inside the sink basins.

Improper repair or maintenance may result in the creation of obnoxious odors or nuisances, and may also adversely affect the operation of warewashing equipment or other equipment which depends on sufficient volume and pressure to perform its intended functions.
