  • Critical: Hands - When to Wash* (corrected on site)
    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils or after engaging in any activity which may have contaminated his/her hands. An employee was observed donning new single use gloves without washing hands.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the large metal pans under the slicer table have an accumulation of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Equipment and Utensils, Air-Drying Required (corrected on site)
    Observation: Pans and food containers were found stacked while wet after cleaning and chemical sanitization on the racks above the three-compartment sink.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Mops - Drying Mops
    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

PIC has submitted a certificate of occupancy from the Fredericksburg Building Department. The water temperature at all handsinks in facility measured over 100'F. The water temperature in the 3 compartment sink measured 115'F. The leak under the 3 compartment sink has been repaired. Floors have been cleaned. The warmer and floors have been cleaned.
This facility is in substantial compliance and is eligible for a permit from the Virginia Department of Health.

Inspection conducted as a pre-opening for Potbelly Sandwich Shop.
The following items need to completed prior to issuance of the permit:
-Provide soap and paper towels at all handsinks throughout the facility.
-Ensure all equipment, containers and utensils are washed and sanitized prior to the opening inspection.
-Remove any shipping plastic/tape from equipment.
-Handsinks in the kitchen measured at 95'F. Ensure the temperature measures at a minimum of 100'F.
-Walk in Freezer not in operation at the time of inspection. Parts are on order and freezer should be repaired today. Please notify the health department once the freezer has been repaired for approval to order food.
-Provide a thermometer for the loading station prep cooler. Provide a thermometer for taking the internal temperature of foods.
-Ovens not yet provided. Will be installed today.
-Facility has not received the occupancy permit from the building department. Please provide a copy to the health department once received.
The following was discussed with the person in charge:
-Employee health policy observed.
-ServSafe Foodhandlers course info provided.
Once the above items have been corrected, please contact the health department for final inspection and approval.

__X_ Approved: Construction/renovation plans for this establishment, as submitted on January 2, 2014 appear to be within compliance of requirements of the Virginia Department of Health
__ Not Approved: Plans for this establishment, as submitted on December 27, 2013 do not clearly provide for all items required by the Virginia Department of Health. These items are described in the attached letter to the responsible individual.
Please note that all items are subject to a final inspection. I reserve the right to make additional requirements at the time of the inspection for items that were not shown on the plans.

Continuation of review of construction plans and a phone consultation with the representative from State Permits, Inc. company representing Potbelly's Sandwich Shop.
Requested a new floor plan and equipment schedule during this phone consultation as the ones submitted are not sufficient for the review process. Also discussed a possible walk thru of this facility. The rep from State Permits, Inc. advised she will get back with me next week as to which of these possibilities they will pursue.
