Flour is sifted after each breading drop (every 15 minutes). Discussed with operator: 1) ensure all utensils are washed, rinsed, and sanitized properly. Facility was observed very clean and well maintained. Thank you!

Observation: The nonfood contact surface of the bottom of the drawer on the prep line and the prep unit cutting board is covered with foil which is not corrosion resistant, nonabsorbent, and/or smooth.
Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Replace the foil every 24 hours to ensure cleanliness.
- Equipment - Fixed Equipment, Spacing or Sealing
Observation: The hand sink in the men's restroom is not sealed to adjoining equipment or walls.
Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.

Observation: The shelf above the 3-compartment sink was observed in a condition that prevents necessary maintenance and easy cleaning. Observed that the shelf was rusted and the paint was peeling.
Correction: Repair the shelf to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability.

Observation: The nonfood contact surface inside of the drink station cabinet located in the dining room has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Discussed details of complaint with the Person in charge. Did not observe foods to be left out at room temperature during today's inspection. Upon leaving the facility, EHS observed 3 pans of cooked chicken stored uncovered in the parking lot behind a white work van.
