Dish machine servicer was called during inspection- they will be coming out shortly to refill dish machine sanitizer, check the quat sanitizer at the 3-compartment, and bring new test strips. Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a quat test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Observation: Quat sanitizer concentration was above 500 ppm.

Observation: Sanitizer 0 ppm. Sanitizer container was nearly empty. Switched to a new container, but the sanitizer isn't moving through the line properly. A switch to prime the sanitizer line could not be located.
Correction: Contact the servicer to come out and restore proper sanitizer levels.

Observation: The following were observed: dusty ceiling, dirty shevling throughout kitchen, moldy gasket in the back freezer, dirty mop sink, greasy floor behind fryer.
