The purpose of today's visit was to conduct a routine inspection. Observed facility clean and organized. EHS provided CFM with extra handwashing signs and CFM card guidelines.
- Certified Food Manager/Certificate Process (repeated violation)
Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided).
- Handwashing Signage at Handwashing Facilities Required
Observation: Observed that sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees.
Correction: Provide a sign or poster at all handwashing sinks used by food employees that reminds food employees to wash their hands.

The purpose of today's visit was to conduct a routine inspection. EHS observed facility clean and organized. EHS observed the following good practices: equipment temperature logs and easily accessible Employee Health training documents. EHS provided PIC with the CFM requirements handouts. Inspection time reflects waiting for second PIC to arrive with proof of successfully passing CFM exam.
- Utensils That are In-Use / Between-Use Storage (corrected on site)
Observation: Dispensing and/or in-use utensils improperly stored between use as follows:-----ice scoop observed laying on top of ice inside ice bin.
Correction: During pauses in food preparation or dispensing, food utensils shall be stored in one of the following manners: 1) in the food with their handles above the top of the food and the container, 2) in food that is not potentially hazardous (time/temperature control for safe food) with their handles above the top of the food within containers or equipment that can be closed, 3) on a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food contact surface of the food preparation table or cooking equipment are cleaned and sanitized, 4) in running water of sufficient velocity to flush particulates to the drain, 5) in a clean, protected location if the utensils are used only with a food that is NOT potentially hazardous (time/temperature control for safe food), or 6) in a container of water if the water is maintained at a temperature of at least 135°F and the container is cleaned frequently. CFM REMOVED ICE SCOOP WITHOUT TOUCHING ICE AND PLACED IN ICE WITH HANDLE UP.
- Wiping Cloths/Use Limitation/Wet Towel Storage (corrected on site)
Observation: Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored in containers without sanitizer solution.
Correction: Wet wiping cloths are to be used for wiping counters and other equipment surfaces and are to be held in a chemical sanitizer solution at the appropriate concentration between uses. PER CFM THE POLICY HAS BEEN TO CHANGE WET WIPING CLOTHES IN CONTAINER EVERY 30 MINUTES. SOLUTION HASN'T PREVIOUSLY BEEN KEPT IN CONTAINERS TO PREVENT SPILLING WATER ON COUNTER. CFM MOVED WET CLOTHS TO SANITIZER SOLUTION.
- Utensil / Handle to Consumer & Employee to Prevent Contamination
Observation: Unwrapped knives and forks observed store in the the customer self service area with the lip/food contact surface up.
Correction: Knives, forks, and spoons that are not prewrapped shall be presented so that only the handles are touched by employees and consumers if consumer self-service is provided.
- Certified Food Manager/Certificate Process
Observation: The person in charge (PIC) at the beginning of the inspection did not have proof of a valid certificate of successful completion of a Certified Food Manager (CFM) exam on site. The second PIC that showed up the end of the inspection did not have the photo card from ORS Interactive.
Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided). PIC IN CHARGE STATED HAVING PASSED THE CFM EXAM FROM SERVSAFE AND CONFIRMATION WAS OBTAINED DURING THE INSPECTION VIA PHONE FROM THE EXAM VENDOR. EHS WAITED UNTIL ANOTHER CFM WITH HARD COPY PROOF ARRIVED.
