    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets. When determining the temperature of thin foods, those having a thickness less than 13 mm (1/2 inch), it is particularly important to use a temperature sensing probe designed for that purpose. Bimetal, bayonet style thermometers are not suitable for accurately measuring the temperature of thin foods such as hamburger patties because of the large diameter of the probe and inability to accurately sense the temperature at the tip of the probe. However, temperature measurements in thin foods can be accurately determined using a small-diameter probe 1.5 mm (0.059 inch), or less, connected to a device such as thermocouple thermometer.

  • Equipment/Good Repair and Proper Adjustment
    Observation: The walk-in refrigerator is not holding foods at 41F or bellow.
    Correction: Equipment shall be maintained in a state of repair and condition that meets the requirements specified under Parts 4-1 [Materials for Construction and Repair] and 4-2 [Design and Construction]. Proper maintenance of equipment to manufacturer specifications helps ensure that it will continue to operate as designed. Failure to properly maintain equipment could lead to violations of the associated requirements of the Code that place the health of the consumer at risk. For example, refrigeration units in disrepair may no longer be capable of properly cooling or holding potentially hazardous (time/temperature control for safety) foods at safe temperatures.
  • Critical: Equipment, Food-Contact Surfaces, and Utensils (Critical)
    Observation: The slicer and onion chopper are not clean to sight and touch.
    Correction: Equipment food-contact surfaces and utensils shall be clean to sight and touch. The objective of cleaning focuses on the need to remove organic matter from food-contact surfaces so that sanitization can occur.
  • Critical: Equipment Food-Contact Surfaces and Utensils/Cleaning Frequency (Critical)
    Observation: The cutting boards used with potentially hazardous food is not cleaned throughout the day at least every 4 hours.
    Correction: If used with potentially hazardous food (time/temperature control for safety food), equipment food-contact surfaces and utensils shall be cleaned throughout the day at least every 4 hours. Microorganisms may be transmitted from a food to other foods by utensils, cutting boards, thermometers, or other food-contact surfaces. Food-contact surfaces and equipment used for potentially hazardous (time/temperature control for safety) foods should be cleaned as needed throughout the day but must be cleaned no less than every 4 hours to prevent the growth of microorganisms on those surfaces.
  • Equipment/Nonfood-Contact Surfaces/Cleaning Frequency (repeated violation)
    Observation: The nonfood-contact surface of the shelving, hood, walk-in air curtains, caulk around the warewashing machine, exterior of food storage containers, exterior of the refrigerators, and the exterior of the microwaves are not cleaned at a frequency necessary to preclude the accumulation of soil residues.
    Correction: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. The presence of food debris or dirt on nonfood contact surfaces may provide a suitable environment for the growth of microorganisms which employees may inadvertently transfer to food. If these areas are not kept clean, they may also provide harborage for insects, rodents, and other pests.
  • Critical: Backflow Prevention, Air Gap (repeated violation)
    Observation: No air gap at the mop sink with the hose attached to the basin.
    Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less than 1 inch for proper backflow prevention by the air gap.
  • Critical: Handwashing Sinks/Numbers and Capacities
    Observation: There are not an adequate number of handwashing sinks necessary for the convenient use by employees. The prep area does not have an easily accessible handwashing sink. No handwashing sink in the basement were a mixer and unprotected food is stored (Prepackaged foods only in the downstairs storage area).
    Correction: At least 1 handwashing sink, a number of handwashing sinks necessary for their convenient use by employees in food preparation, food dispensing, warewashing areas, and in, or immediately adjacent to toilet rooms
  • Plumbing System/Maintained in Good Repair
    Observation: The water line under the handwashing sink and the missing pipe at the mop sink are not maintained in good repair.
    Correction: A plumbing system shall be maintained in good repair. Improper repair or maintenance may result in the creation of obnoxious odors or nuisances, and may also adversely affect the operation of warewashing equipment or other equipment which depends on sufficient volume and pressure to perform its intended functions.
  • Critical: Conveying Sewage/Operation and Maintenance
    Observation: Sewage is not conveyed to the point of disposal through and approved sanitary sewage system or other system. The grease trap under the 3 compartment sink is clogged
    Correction: Sewage shall be conveyed to the point of disposal through an approved sanitary sewage system or other system, including use of sewage transport vehicles, waste retention tanks, pumps, pipes, hoses, and connections that are constructed, maintained, and operated according to law. Improper disposal of waste provides a potential for contamination of food, utensils, and equipment and, therefore, may cause serious illness or disease outbreaks. Proper removal is required to prevent contamination of ground surfaces and water supplies, or creation of other insanitary conditions that may attract insects and other vermin.
  • Floors, Walls, and Ceilings/Cleanability
    Observation: The acoustic ceilings are not designed, constructed, and installed so that it is smooth and easily cleanable.
    Correction: Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed and installed so that they are smooth and easily cleanable except for anti-slip floor coverings or applications that may be used for safety reasons and except as specified under section 6-201.14. Floors that are of smooth, durable construction and that are nonabsorbent are more easily cleaned. Requirements and restrictions regarding floor coverings, utility lines, and floor/wall junctures are intended to ensure that regular and effective cleaning is possible and that insect and rodent harborage is minimized.
  • Light Bulbs, Protective Shielding (repeated violation)
    Observation: The light bulbs over the hood, 3 compartment sink, prep area, bar area, and the Beverage-air 2 door prep refrigerator are not shielded, coated, or otherwise shatter-resistant.
    Correction: Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food
  • Exterior Walls and Roofs, Protective Barrier
    Observation: The perimeter walls and/or roof of the food establishment do not effectively protect the establishment from the weather and/or the entry of insects, rodents, and/or other animals. The wall separating the kitchen from the walk-in refrigerators is observed leaking.
    Correction: Perimeter walls and roofs of a food establishment shall effectively protect the establishment from the weather and the entry of insects, rodents, and other animals. Walls and roofs provide a barrier to protect the interior and foods from the weather, windblown dirt and debris, and flying insects.
  • Physical Facilities/Repairing (repeated violation)
    Observation: The rotten walls(behind the handwashing sink), missing wall tiles (under the warewashing machine), and the peeling ceiling tiles are not maintained in good repair.
    Correction: Physical facilities shall be maintained in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. This requirement is intended to ensure that the physical facilities are properly maintained in order serve their intended purpose.
