    Observation: Observed sausage cooling in styrofoam container with lid on in the back 3 door cooler.
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.

    Observation: Food cold holding at improper temperature in front 3 door cooler. (fan was blocked, shelves are lined.)
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. (If unit temperature does not return to 41°F, have the unit repaired or replaced.)
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Food cold holding at improper temperature in the prep unit. (temperature was reduced.)
    Correction: In 4 hours, if the unit temperatue has not come down to 41°F or below, discard items left in the unit and have the unit repaired or replaced.
  • Pests - Controlling Pests*
    Observation: Observed a live roach on the pipes under the 3-vat sink. (Operator states they received a shipment of supplied today.)
    Correction: Have pest control inspect and treat.
