1. Facility was very short on staff during inspection. .
2. No food prep was observed.

  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE). Observed raw shelled eggs being stored over broccoli in the RIC. PIC disposed of the eggs.
    Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Equipment - Cooking and Baking Equipment (corrected on site)
    Observation: The cavity of the microwave oven is observed soiled. PIC cleaned the interior of the microwave.
    Correction: Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.

  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Foods observed to be cold holding at improper temperatures in the infants room reach in cooler. The cooler was measuring at 50'F. Rice was measured at 46'F internally and milk was measured at 55'F on the surface. Foods were discarded and all milk was placed into the toddlers room reach in cooler during the inspection. The PIC turned the cooler down and provided a log for this cooler to ensure it is working properly prior to using.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

The above observations and the following were discussed with the person in charge:
-Employee health policy observed.
-Shell eggs can only be used for baking purposes and must be stored on the bottom shelf of the reach in cooler when used.
-Designated dented can storage area.
-Several foods are removed from the original packaging for storage purposes. Retain the ingredients information in a separate book or attach to the exterior of the storage container for allergy purposes.
Lots of good handwashing observed during this inspection, great job!

  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The food-contact surfaces of equipment were not observed sanitized. The bleach sanitizer in the dishmachine was measured at 0 ppm. PIC replaced the bucket of sanitizer with a newer container and the sanitizer was corrected to 50 ppm in the dishmachine.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

The above observations and the following were discussed with the person in charge:
-Ensure the dented cans are being placed in the designated area for dented cans to be returned.
-Employee health policy observed/reviewed.
Facility observed to be very clean and well maintained, great job by all staff members!
