The facility is obtaining a site for an outdoor waste receptacle by the city. The facility currently takes its trash to Sarah Bonwell to be discarded.

Salmon Aquaculture letter to be kept on site once the new letter has been received.
  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site)
    Observation: An open beverage container is stored with salt/pepper shakers and packages.
    Correction: Provide a designated area where employees may store beverages so as not to contaminate exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles, or other items needing protection.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: An employee was observed shredding herb that goes into salad dressing that requires no further cooking with their bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: The following food in the cookline make table is cold holding at improper temperatures: crawfish- 48*F, turkey-49*F, egg-44*F in the cookline make table
    Correction: butter- 90*F out at room temperature.
  • Lighting, Intensity
    Observation: Less than 50 foot candles of light was noted at the cookline (15-34 fc) and back room prep sink/area (19-39 fc).
    Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor.
