    Observation: The following food item(s) were found hot holding at improper temperatures using a calibrated food temperature measuring device: Chicken Strips and Waffle Cut Sweet Potatoes. Confirmed both items had not been on the serving line for more than two hours and observed both were properly reheated.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above unless the permit holder is using "time as public health control" as specified under 3-501.19.
  • Refuse Areas / Enclosures / Receptacles / Good Repair
    Observation: The waste storage container for kitchen garbage has a damaged lid.
    Correction: Storage areas, enclosures, and receptacles for refuse, recyclables, and returnables shall be maintained in good repair.

The purpose of today's visit was to conduct a routine inspection.
Manager will place work orders for the repair of the trough under the 3-vat sink and the plumbing, please also ask about the possibility of turning up the temperature of the hot water at the handsinks.

    Observation: Plumbing connections under the 3vat sink piping are leaking.
    Correction: A plumbing system shall be maintained in good repair.
  • Physical Facilities Good Repair
    Observation: Observed that the trough under the 3-vat sink kis not maintained in good repair, tiles observed cracked and water observed seeping into wall. .
    Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.

NOTES:
3-vat sink and buckets observed at 200 ppm.
  • Food Temp Meas Device, Calibrated (corrected on site)
    Observation: The food temperature measuring device was found out of calibration in the range of use. One thermometer was observed at 10F in ice water, others were observed at 32F.
    Correction: Food thermometers shall be calibrated in accordance with manufacturer's specifications as necessary to ensure their accuracy. It is suggested that food thermometers be calibrated at least once a week in a cup completely filled with ice and cold water to a temperature of 32°F.

The purpose of today's visit was to conduct a risk factor assessment inspection.
Although not noted as a violation, it was observed that two thermometers were calibrating at 20F and 10F in ice water. If you are finding that thermometers are consistently needing adjustment, please replace them. Proper calibration was reviewed with employees today.
