If time instead of temperature is used for tandoor chicken (cook at 11, discard at 3, etc), a time control policy must be present (printed and given to PIC). There is much more refrigerator space in the new restaurant, do not over stock shelves in reach in coolers - utilize extra refrigeration. Rice scoop is a plastic tub with no handle that does not protect the rice from contact with hands - use a scoop or paddle with a handle. Dish machine is not in use at this time - owner thinks he may not use it at all.
Good date marking observed. Buffet is set up at 11 AM and discard at 2:30 PM

    Observation: Observed employees fail to wash hands after returning to work and after touching face.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Observation: Observed employee drinking from uncovered cup.
    Correction: Employee drinks must have a lid and straw.

    Observation: Food stored on the floor in the walk in cooler.
    Correction: Store all food items 6 inches off the floor.

    Observation: Observed deep, covered containers of warm food in walk in cooler.
    Correction: Separate into shallow pans, do not cover to allow heat to escape.

    Observation: Observed in need of cleaning: hood filters over tandoor oven, wire racks, outside of spice bins, inside reach in refrigerators, peel coating off of new equipment.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: Observed boxes of wares and pots and pans stored on the floor.
    Correction: Store six inches off the floor.

    Observation: Plastic utensils at the buffet are incorrectly dispensed.
    Correction: Dispense so that all handles are in the same direction.

    Observation: Observed floors at cook line in need of cleaning.
    Correction: Clean regularly.

    Observation: Several flies noted in the kitchen.
    Correction: Eliminate harborage and entry points.
