Facility placed on a 6 hour time plan for tomatoes on sub line. Written procedures are now in place. Facility to monitor the temperature of the tomatoes during the 6 hours and document these temperatures on a temperature log. No tomatoes shall be carried over. Six hours is the maximum time for the tomato, then the product must be discarded.

    Observation: Pastrami, cheese, pepperoni, provolone, roast beef, hot ham and salami in the display case - tomatoes in the deli prep and sliced tomatoes on the sub line cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Adjust the display case and keep the door closed. Cool tomatoes properly prior to placing on the deli prep unit. Use a 6 hour time as a public health control plan for the tomatoes on the sub line.
