    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

The floors walls and cove molding have been in violation for all inspections for the past year and must be repaired or replaced before permit is renewed. Permit will expire in April 2013 and will not be renewed unless all repairs are made. There is an odor of sewage in the kitchen. Manager states that there is not a sewage back up. If this odor is being caused by dirty water under the existing floor tiles, all flooring that is loose and holding dirty water must be replaced.

    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
