No food received raw or cooked on site. Good handwash and glove use observed. Adequate light intensity (58 foot candles at prep). We discussed: dented cans, some spot cleaning. Ok for permit.
  • Food Storage - Clean and Dry Location (repeated violation)
    Observation: Found case foods stored on floor in walk-in refrigerator.
    Correction: Elevate all foods 6" off floor.
  • Critical: Backflow Prevention Device, When Required* (corrected on site) (repeated violation)
    Observation: Found hose at mop sink connected without backflow prevention device.
    Correction: Keep hose disconnected, when not in use or install backflow prevention device.

    Observation: A food employee failed to wash their hands before putting on gloves prior to engaging in food preparations.
    Correction: Train food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation and before putting on gloves, if used, prior to food preparation. Discussed requirements with employee who then washed their hands.
  • Food Storage - Clean and Dry Location
    Observation: Food stored on the floor in the walk-in freezer.
    Correction: Elevate food storage onto approved shelving with minimum 6" legs or casters.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Torn gasket on chest freezer. Rusted shelf under one of the prep tables.
    Correction: Replace gasket and refinish rusted shelf.
  • Critical: Backflow Prevention Device, When Required* (corrected on site)
    Observation: Observed a hose in the mopsink that is attached to a faucet that is not protected with a backflow prevention device..
    Correction: Install an approved backflow prevention device (vacuum breaker) or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch. Owner disconnected hose from faucet until bfp device is installed.
