Observation: Chemical sanitizer immersion time was not adequate for quaternary ammonium sanitizing solution. Not enough solution in basin to completely cover pans, PIC stated she will start filling basin as high as wash and rinse basins and double amount of sanitizer needed per basin to ensure pans are fully covered.
Correction: Provide quaternary ammonium at proper concentration of 100-200ppm and immerse or expose food contact surfaces to sanitizing solution for adequate time.

Observation: The cutting board are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
