The concentration of the quaternary ammonium compound sanitizer at the 3-compartment was checked and tested and was observed to be acceptable at, 200 ppm.

    Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: Top of cooking equipment located under the hood and light fixtures under the hood
    Correction: Nonfood-contact surfaces of equipment and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Clean the surfaces of the equipment that are located under the hood and also clean the surfaces of the light bulb shields under the hood more frequently to prevent duct build-up.

    Correction: Storage areas, enclosures, and receptacles for refuse, recyclables, and returnables shall be maintained in good repair. Replace the missing lid or the dumpster.

    Observation: Outside refuse container was uncovered.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.

    Observation: Broken table tops and dumpster lid were observed stored on the ground adjacent to the refuse container outside the facility.
    Correction: A storage area and enclosure for refuse, recyclables, and returnables shall be maintained free of unnecessary items and kept clean. Remove these items from the area.
