Manager knowledgeable on food safety risk factors and employee health. Employees observed washing hands and wearing and changing gloves during inspection. Meats are slow cooked and smoked on premise. All foods date marked as required.Raw and ready-to-eat foods stored separately in walk-in cooler in food preparation cooler.Several employees are Serv-Safe certified and understand good food handling practices and follow good procedures. Foods (meats, fresh made salads, etc.) are made in-house.

Firm is family owned. Manager knowledgeable on food safety risk factors and employee health. Employees observed washing hands and wearing & changing gloves during inspection. All foods being held at proper temperatures. Temperatures are monitored throughout the day and recorded on a chart. Large quantities of food are being prepared and are being cooled using a variety of different approved methods. All foods date marked as required. Firm has a cleaning schedule in place for all employees to follow. Several employees are Serv-Safe certified. Foods are made and prepared in house.'

    Observation: The beverage cups were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: The plywood wall or wall covering inside the walk-in refrigerator around the door is not smooth and easily cleanable.
    Correction: Repair or replace wall or wall covering to make it smooth and easily cleanable.
  • Lighting, Intensity
    Observation: Less than 10 foot candles of light was noted in the walk-in refrigerator next to the dish machine area.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

    Observation: The ceiling and the ceiling vents in the kitchen area are noted in need of cleaning.
