Three compartment sink clean, ice machine is clean and full of ice, restrooms and dining area are clean. Refrigeration is holding at proper temps. Product is holding at proper temps.

    Observation: The door gasket of the M3 Turbo air unit is torn/damaged.
    Correction: Repair or replace the M3 Turbo air unit door gasket in accordance with the manufacturer's specifications.

Continue to record temps daily on temp log sheet. Copy of food handler schedule left with chef. All employees handling food need to have food handler cards within next two weeks. Refrigeration and product checked are holding at proper temperatures.

    Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
