    Observation: Observed pico de gallo & guacamole on ice line and pico de gallo, corn salsa, and black beans on prep table cold holding at improper temperatures.
    Correction: Add ice to ice line. Adjust thermostat in prep table or add ice underneath food containers to maintain TCS food at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: The interior of the ice machine was soiled with a mold-like substance.
    Correction: Wash, rinse, and sanitize the interior of the ice machine.

    Correction: Turn on prep table. For the prep table by the stove, add ice underneath food containers during lunch/dinner rush. Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
