  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Food at the fryer prep station and grill prep station cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site)
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read 149
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.

    Observation: Station 3 was observed not cold hold ing food at 41 degrees or lower.
    Correction: Monitor the station to ensure it cold holds properly. The units were just stocked for the evening which could account for the temperatures. If the problem continues after monitoring it throughout the evening, have the unit serviced to restore proper working order.
