Follow-Up Inspection.Leak in the roof over Walk-In refrigerator was found to causing the condensation. The roof has already been repaired and there is no condensation in the Walk-In at this time. All violations from past inspection have already been corrected. Additionally, new menu is starting tomorrow and has the consumer advisory. Thank you for being pro-actively addressing issues and prompt response!

Proper glove use observed. Staff is knowledgeable of food safety practices. Make sure the keep foods in the walk-in refrigerator elevated 6" off of the floor.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Raw meat in the walk-in refrigerator being stored on the top shelf above ready to eat food.
    Correction: Raw meat should be stored in a mannor where cross contamination with ready to eat food can not occur.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Condensation dripping from the ceiling inside of the walk-in refrigerator.
    Gaskets of the Turbo air prep unit and the small bev air pep unit are in disrepair.

    Correction: Have the walk-in repaired to prevent condensation from forming and dripping in the walk-in refrigerator.
    Replace the gaskets that are in disrepair.
  • Handwashing Cleanser - Availability (corrected on site)
    Observation: Hand sink at the bar does not have hand soap or paper towels.
    Correction: All hand sinks need to be well stocked with hand soap and paper towels.
  • Handwashing Signage/Handwashing Facilities
    Observation: The hand sink at the bar does not have signage identifing it as a hand sink.
    Correction: Place a sign at the sink that lets everyone know it is a hand sink and encourages proper hand washing.

The following observations have been corrected since the inspection on 9/16/13:
The refrigerated pizza preparation unit and salad service unit were repaired by a service company the same day of the inspection. All foods were observed being held at 41F or below.
Thermometers have been purchased and placed in all refrigeration units.
The dish wash area and bar area has been cleaned.
All equipment has been moved and cleaned under and a thorough cleaning has been conducted in the kitchen and bar areas. The cleaning schedule that was in place is being followed closely by management and by the employees.
ALL VIOLATIONS CORRECTED.

  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: The foods in the refrigerated pizza preparation unit and salad/soup holding were cold holding at improper temperatures
    Correction: The cheese and sausage in the pizza preparation unit and the cheese, sliced tomatoes and packaged soups were voluntarily disposed of by management. The non perishable foods were moved to a refrigeration unit that was capable of maintaining food storage at 41°F or below.
  • Temperature Measuring Devices - Food
    Observation: The food temperature measuring device (degrees F) located in the pizza preparation unit and salad service unit were not accurate.
    Correction: Provide a temperature measuring device that is accurate within +/- 2 degrees Fahrenheit in the intended range of use.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the dishwasher and insides of refrigeration units in the bar area has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Physical structure in the noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Owner/Manager knowledgeable on food safety risk factors and employee health . Firm has written policy and records for employee health. Voluntary temperature monitoring records are kept on foods. Ready-to-eat foods are all date marked. Employees knowledgeable on food safety risk factors and employee health. Employees observed washing hands, wearing and changing gloves as necessary. Meat, poultry and fish products, salad dressings and most foods are raw and made from scratch.
