    --Raw animal foods (sausage) were stored above ready to eat foods in the upright Bev-Air cooler. Rearranged to the bottom to avoid contamination.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    --Food was held at 47-52°F on the top rail rather than 41°F or below as required in the Bev-Air prep cooler. eggs 52*F cheeses 47*F. All items discarded. See item #31.
  • Cooling, Heating, & Holding Capacities (46.611)
    --The Bev-Air prep cooler is not maintaining the top rail temps at 41*F or less (47-52*F) and the bottom air was checked at 41.9*F. The temp knob is turned all the way up. It was stated that it was just charged as it has a leak. The owner was called and she stated that she will go to Ohio tomorrow to buy a brand new one.
