She asked if I had any ideas on how to calibrate it. Worked with her on figuring out how to calibrate the thermometer. It was calibrated to 32.7 F today. --Pasta boiled for hot holding - 160.7 F --Quaternary Ammonia test strips provided by kitchen manager. --Steam Table: Alfredo Sauce - 160.4 F --The kitchen manager drained the pasta in an indirectly plumbed sink. --Turbo Cooler: Chopped Lettuce - 41.6 F, White Cooler: Salad - 46.7 F (Note - Kitchen Manager said that this salad was made in the past 30 minutes, it is in the cooling process), Milk Cooler: Milk - 41.6 F --Wiping cloth stored in 200ppm quaternary ammonia. Label calls for 150-400ppm
