  • KDA_3_50113A - --Raw ground beef was being thawed at room temperature on top of the small chest freezer. COS, moved to RIC.
  • KDA_3_50116A2 - --In the RIC in the kitchen a container of cheese had a temperature of 52 F. The container was pulled out and put back several times during the inspection. The ambient temperature of the RIC was 29.1 F. COS, cheese put in the RIC and owner educated. Also, on the ice bath the lettuce had a temperature of 51 F. COS, VD. Discussed using TPHC for the lettuce. Also, the RIC in the wait station an open gallon container of milk had a temperature of 45 F. The server said she didn't know how long the milk was in the RIC. COS, VD.
  • KDA_3_50118A2 - --In the Coke RIC a container of made on site chili was not date marked. The owner said it was made on 12/19. COS, dated. Also, in the RIC in the kitchen 5 containers of deli meats were not date marked. The owner said the meats were sliced on 12/19. COS, dated.
  • KDA_4_10111A - --In the RIC in the kitchen raw bacon and ground beef patties are stored in direct contact with non-food grade Sterilite containers. Also, in the storage area flour and sugar are stored in direct contact with non-food grade Sterilite containers. The establishment will need to purchase containers before correcting.
  • KDA_4_30111 - --The RIC in the service area is not holding PHF's at 41 F or below. The ambient temperature is 43 F.
  • KDA_4_60111A - --Pie plates stored as clean over the RIF in the kitchen have food debris in them. COS, moved to be cleaned and sanitized.
  • KDA_4_90411B - --The utensils stored as clean over the 3-vat sink are stored with the lip contact surface up and the handles down.
