KDA_2_30114I - --One employee was going back and forth from the outside to indoors, removing cooked meats from the smokers and transferring them to the walk in cooler. The employee made one trip, and opened the door back into the building using the door handle to place the meat in the walk in cooler. The employee then removed his gloves and donned a new pair without washing his hands. The employee then went back outside and picked up a rack of ribs with his gloved hands and placed it on the rack.-COS discarded ribs and educated.
KDA_Defacto - --2 bags of cooked turkey in the walk in cooler were dated 9/2. Most items in the cooler were labeled with discard dates beyond the current date. The manager said that these items were cooked on 9/2 and should have been dated with the discard date but were incorrectly labeled with the preparation date.-COS changed to the correct discard date. --Cook: 160.5 pork ribs --Henny Penny warmer: 150.2 turkey Steam well: 158.6 corn --Walk in cooler: 39.9 chicken Make table: 40.5 potato salad
