Educated principal that working containers are to be labeled. Spray bottle of liquid had nozzle pointed toward roller grill and a box of candy bars. --Concession kitchen - dried food debris was in the sink base of one of the 3 vat compartments. --Concession kitchen - educated principal of cooling and reheating methods. --Concession kitchen - large coffee urns stored with direct contact to the floor. --Concession kitchen - single use food trays are stored with direct contact to the floor. --Concession kitchen - the kitchen has no hand sink and no hand cleanser available. A towel dispenser is in place on the north wall. --Concession kitchen was included in the inspection today. Accompanied by food service manager and high school principal. Provided education and Focus on Food Safety manual. The base of the electric roaster has dried food debris and pieces of dried cooked ground beef. The microwave has a substantial amount of food splatters on the inside cavity. 10/23/15 was the last sporting event the concession kitchen was opened. Clean dishes and pans were stored in one of the vats of the 3 vat sink. The kitchen has no sanitizer or sanitizer kit available. --Kitchen walk in freezer - food frozen solid. Concession Kitchen - two reach in freezers - food frozen solid. --School kitchen - 3 vat sink - no wares washed - chlorine 50 ppm Mechanical ware wash - baking pan - chlorine 50 ppm Concession kitchen - not sanitizer available, no test kit available. Cleaned wares stored in vat of sink. --Walk in cooler - 1/2 pint milk 41.2
