She then walked over to the clean utensils bin to get a clean set of silverware for a table. COS Waitress was educated. The utensils that she handled was put in the dirty soiled utensils tub. Waitress washed her hands. KDA_2_30114H - --Observe PIC with blue single use gloves on hands dump sanitizer water out of white bucket in handwashing sink. She then used a scrub pad to clean the handwashing sink. After that, she proceeded to fill up the sanitizer bucket up. Next she went to the vegetable MT to straighten up the cutting utensils. COS PIC was educated. COS PIC was educated. She used to the gloves to wash dishes in the warewashing area. KDA_4_60111A - --Stored as clean and stacked, stainless steel pan and bowls had old stickers and sticker residue on the exterior surface. COS Pans and bowls were removed to be scrapped, washed, rinsed, and sanitized. Sticker residue was on the exterior surface of stainless steel pans that was stored with shredded cabbage and onions inside. Employee and PIC said they were opened last week but did not know the date. COS Pineapples were discarded. KDA_3_30211A1a - --In the walk in cooler (WIC), raw fish was stored on a wire shelf above ready to eat (RTE) onions. COS Raw fish was removed. In the WIC, raw beef and raw pork was stored on a wire shelf above RTE rice that was soaking in water. COS Beef and pork was removed. In the WIC, raw chicken was stored above RTE green bell peppers and ginger. KDA_3_30211A1b - --In the WIC, raw pork was stored on a wire shelf above cooked chicken. COS Raw pork was removed. KDA_3_50116A2 - --Sitting on the back table were 2 large pans filled with duck broth. PIC said it had been sitting out since 9am. She said she was going to cook it again.
