Equipment clean and in good condition. Floors clean. Dish machine @ 50ppm. Sprayer ok. 3 compartment sink operational and no leaks in plumbing. Restrooms ok. Customer areas ok.**Remove red fire caulking on hood. Re apply with grey fire caulking. Make sure caulking is smooth when applying.**Seal any gaps in coving areas or walls before opening.
