[4] Sanitization rinse; clean; temperature concentration; exposure time; equipment; utensils sanitized Dishwasher was not dispensing proper levels of sanitizer. Due to the long holiday and because the facility has alternative sinks for doing the 3 step cleaning process; facility is given 7 days from today to get repaired. Unit cannot be used for sanitizer until repaired. It is highly recommend facility uses a dishwasher log for the childcare facility. A copy of a blank dishwasher log will be provided to the operator of at the reinspection.

General Comments that relate to this Inspection No violations observed at time of inspection. Cold holding checked OK and recorded < 40 F. No food observed being prepared on site at time of inspection. Please date code all food once opened; practice first in; first out method of rotation. All food properly stored; no chemicals stored next to food. Please have Rachel Little who has taken the ServSafe Food Handler Employee Food Safety Online Course and Exam. Please complete the Food Manager Protection Course and acquire a Washoe County Certified Food Protection Manager Certificate. Please bring passing test results(certificate); confirmation of an approved 16 hour-course; picture ID and $32.00 to Washoe County Environmental Health at 1001 E Ninth Street.
