Today I conducted a routine inspection and discussed with management the following:
1. Management should reiterate the 5 major risk factors associated with foodborne illness with all staff frequently: Employee health policy, Personal hygiene, Contaminated equipment/utensils, Time/Temperature relationships for food and Unapproved food sources.
2. Management should calibrate all food thermometers at least once a week in an ice water bath to 32f to ensure accuracy when taking food temperatures. The ice water bath is a glass completely filled with ice and some cold water. The thermometers should be washed, rinsed and sanitized before and after each use.
3. Management should instruct the staff to set up the 3-vat sink each morning. WASH in hot, soapy water. RINSE in hot, clean water and SANITIZE in cold water (65f-75f) and Quaternary Ammonium at a concentration per manufacturer's specifications (150-400ppm or 200-400ppm). The water in the 3-vat sink and the buckets for wet towels should be changed at least every 2 hours or more often as needed.
4. Management will be changing the menus to reflect their new name and will continue to provide the Consumer Advisory for BEEF menu items ONLY. All other foods such as seafood and poultry are fully cooked.
5. Management will continue to use the licensed pest control operator to dispense and treat for any insects such as fruit flies.
6. Management can have more staff members certified with the food handler's license. See hand out provided.

  • Sanitizer Test Kit Required
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a QUATERNARY AMMONIUM test kit. DISCUSSED WITH THE MANAGER. MANAGER SHALL ORDER THE TEST KIT FROM THE SUPPLIER WHO PROVIDES THE QUATERNARY AMMONIUM AT THE MOP SINK. MANAGER SHALL ALSO ASK THE SUPPLIER IF THE CONCENTRATION OF QUATERNARY AMMONIUM IS EFFECTIVE AT 150-400PPM OR ONLY 200-400PPM. MANAGER SHALL TRAIN STAFF TO USE THE TEST KIT.
  • Single-Service and Single-Use Articles / No Reuse
    Observation: Manufacturer containers such as feta cheese containers and pickle buckets are being reused for the storage of other foods.
    Correction: Manufacturer containers may not be reused for secondary storage of other foods because the containers are not durable enough for multiple reuse and become uncleanable. DISCUSSED WITH MANAGER. MANAGER SHALL ORDER NSF, FOOD GRADE, REUSABLE CONTAINERS FOR THE STORAGE OF FOODS. DO NOT REUSE SINGLE USE ITEMS UNLESS FOR WET TOWEL STORAGE.
  • Clean Ice Bins, Beverage Dispenser Nozzles, Etc. per Manufacturer Specs.
    Observation: Surfaces of ice bins, beverage dispensing nozzled and/or enclosed components of equipment are not being cleaned as required. Observed mold inside the interior of the ice machine.
    Correction: Surfaces of utensils and equipment contacting food that is NOT potentially hazardous (time/temperature control for safety food) such as ice bins, beverage dispensing nozzles, and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment at a frequency specified by the manufacturer or at a frequency necessary to preclude accumulation of soil or mold. DISCUSSED WITH THE MANAGER. MANAGER SHALL ENSURE ALL SURFACES AND COMPONENTS OF EQUIPMENT ARE BEING CLEANED AND SANITIZED AS OFTEN AS NEEDED TO REMOVE DEBRIS, GRIME AND/OR MOLD/MILDEW.
