Note: Victory 1DR upright (#2) refrigerator adjacent to grill was on defrost mode during inspection. Unable to get ambient temperature for the unit as it was busy and door opened very frequently. Recommend the manager to call a technician to adjust the defrosting cycle and make sure it does not go in defrost mode during business hours. Also, to check if the unit is working fine. Most of the food inside was cooling.
Note: All the food items that goes on ice or on steam table were cold held in walk-in refg and hot holding in cabinets respectively.
  • Equipment & Utensils / Air-Drying or Adequate Draining Required
    Observation: Metal pans were found stacked while wet after cleaning and chemical sanitization.
    Correction: After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food.

The purpose of today's visit is to conduct a risk factor assessment inspection.
**Monitor temperatures of food on ice at the buffet and cooking stations. Make sure that container is surrounded by ice to keep foods at 41F or below.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) (repeated violation)
    Observation: The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device: cooked chicken 58F, cous cous salad 53F--buffett. Note: Per the manager they refilled the items around 1 pm. Sliced cheese on ice 53F --grill station. Note: Put back in refrigerator.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth.

  • Clean Ice Bins, Beverage Dispenser Nozzles, Etc. per Manufacturer Specs. (corrected on site)
    Observation: Surfaces of ice dispensing nozzle at soda machine needs cleaning.
    Correction: Surfaces of utensils and equipment contacting food that is NOT potentially hazardous (time/temperature control for safety food) such as ice bins, beverage dispensing nozzles, and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment at a frequency specified by the manufacturer or at a frequency necessary to preclude accumulation of soil or mold.
