Front door was propped open today. When there is a chance of flying insects this is not acceptable. Keep outer openings protected. Do not over fill pans inside make tables. Keep an inch below the top of the pan. Used breading to be kept cold or sifted after each use or placed on time control. Worker placed pan in walk in. A time control policy has been written for buffet. Permit issued.
  • Utensils - In-Use - Between-Use Storage
    Observation: Rice scoop found in standing water. Cleaver stored between two work stations.
    Correction: Rice scoop can be placed into 135 F water or kept in the rice container as long as the handle remains out of the food. Find an alternative location for storing cleaver that can be easily cleaned.
  • Cooling Methods
    Observation: Chicken found at 59 F inside make table on top of other containers. This is not an acceptable method to try to cool foods.
    Correction: Before placing in make table all food should be 41 F or below. You must take steps to cool this chicken by spreading out onto a flat tray and placing inside walk in without covering.
  • Premises - Maintaining Premises - Unnecessary Items and Litter (repeated violation)
    Observation: Facility is storing unnecessary items to the operation or maintenance of the establishment. (Construction mixer in back of restaurant)
    Correction: Remove all unnecessary items from the facility. The presence of unnecessary articles, including equipment which is no longer used, makes regular and effective cleaning more difficult and less likely. It can also provide harborage for insects and rodents.

DOK passed. We discussed employee health and personal drinks. Only cups with lids and straws are acceptable for personal drinks, not water or gatorade bottles. Write a time control policy for those foods you cannot maintain above 135 F on buffet. 30 day permit is issued.
  • Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent
    Observation: Cardboard is used for storing condiment packs.The nonfood contact surface of the cardboard is not corrosion resistant, nonabsorbent, and/or smooth. Bare wood found under grinder.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Replace with a cleanable alternative. Seal bare wood.
  • Nonfood Contact Surfaces
    Observation: Soda crates are being used as permanent shelves and are not designed or constructed to be easily cleanable. Tin cans reused for utensil storage.
    Correction: Alter or replace crates and cans to provide a surface that is free of unnecessary ledges, projections, and crevices.
  • Physical Facilities in Good Repair
    Observation: Concrete wall is not smooth and cleanable. Gap exists between wall and mop sink providing space for dirt and grime to hide
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Wall behind mop sink has mildew. Edge of floor drain under wok line is dirty. Floor strainer of 3-c sink area is dirty. Overflow tray to water heater is dirty.
    Correction: Clean.

    Observation: Facility is storing unnecessary items to the operation or maintenance of the establishment.
    Correction: Remove all unnecessary items from the facility. The presence of unnecessary articles, including equipment which is no longer used, makes regular and effective cleaning more difficult and less likely. It can also provide harborage for insects and rodents.
  • Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site)
    Observation: Working containers of oven cleaner was not properly labeled.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
