The purpose of today's visit was to conduct a routine assessment. Suggested prepping items, such as spicy chicken wrap, early in day to allow to cool properly to 41F prior to cold holding on service line. Also suggested taking temperatures of reheated foods, even during busy times, to ensure food is properly reheated prior to being placed in McCall hot holding unit and steam wells at service line. Also recommended putting less ice in cold holding wells so pans can be fully submerged in ice, allowing food to remain stored below fill line. This will ensure food remains 41F or below during service.
