The purpose of this visit is to conduct a routine inspection.
Ensure cooling is properly done by keeping the food uncovered until it is completely cooled.

  • Cooling Methods (corrected on site)
    Observation: The following methods used for cooling were not adequate to facilitate proper cooling: Observed chili cooling in a COVERED CONTAINER in the walk in cooler. The cooling process was facilited by the use of a cooling wand.
    Correction: MANAGER REMOVED PLASTIC COVER FROM THE CONTAINER TO AID IN THE RAPID COOLING PROCESS. Cooling hot foods shall be accomplished as follows: 1) placing the food in shallow pans

    Observation: Observed food employees using improper handwashing procedures. OBSERVED EMPLOYEES WASHING HANDS WITH WATER WITHOUT USING SOAP.
    Correction: Food employees shall wash their hands and exposed portions of their arms by: 1) discarding used gloves

    Observation: Observed that hand soap was not provided at each handwashing sink. Observed a hand washing sink that did not have hand soap and employees were using it.
    Correction: Provide hand soap at each hand sink to allow employees to properly wash their hands. EHS requested the manager to provide hand soap immediately.
07/27/2015Complaint
The purpose of this visit is to conduct a risk factor assessment in conjunction with a food borne illness inspection. The manager was present during the inspection and able to provide information regarding employee health policy and company training to educate on prevention of food borne illness. During the inspection documentation was provided to demonstrate how the training is conducted.
It is important to make sure all hand washing sinks are fully stocked with soap and paper towels.
During the inspection EHS observed several employees washing hands at a hand sink where soap was not provided. The manager corrected the violation during the inspection. The food provided is received in a frozen precooked state, stored in the freezer until ordered. Upon order it is reheated, then hot hold for less than 30 minutes. After 30 minutes it is discarded.
EHS required all staff wash hands prior to returning to work.

The purpose of today's visit is to investigate a complaint received by the Health Department on August 5, 2014. The complainant states that they ate at the above facility on Friday, August 1, 2014. Approximately 90 minutes after eating the complainant alleges that they began to feel nausea and later in the evening had diarrhea which lasted three days. Complainant visited the doctor, however no stool sample was taken. EHS discussed complaint with manager. Manager was not aware of the complaint and no other complaints have been received by this facility. Observed facility clean and organized. Observed good hand washing by food employees. No violations observed related to this allegation. Complaint cannot be confirmed.

  • Handwashing Sink / Used for Hand Wash Only (corrected on site)
    Observation: Observed one of the handsinks in the kitchen being used to fill up a pitcher of water.
    Correction: Handsinks are to be used only for washing hands to encourage proper hand washing and to prevent contamination of cleaned hands. DISCUSSED WITH MANAGER.

  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: at cashier/service area - sour cream 47F, half and half 45F. Items moved to refrigerator.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below. Keep pans at front filled only to half and refill as needed. Items that aren't used often (half and half) should be kept just in a refrigerator.
