| To Obtain a Mobile Unit Permit 1. The fryer must be under a hood and vented to the outside. The same goes for a griddle or a stove. 2. Must have a clean white food grade water hose to fill the unit. Must use public water only to fill this unit. 3. Lights must be shielded. 4. We must see all of the equipment working in the unit. 5. Must have someone at all times working in the unit that has passed the food knowledge test. 6. Must have an approved Employee Health Policy. 7.
