The person in charge (PIC) stated that he has the fire extinguishers scheduled to be inspected next week. The PIC will fax or email the EHSS a copy of the invoice when the inspection is complete.

  • Non-Food Contact Surfaces (repeated violation)
    Observation: The nonfood contact surfaces of the following equipment has accumulations of grime and debris:
    1. Interior of the oven and Alto Sham unit,
    2. Exterior of the ice machine.

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Discussed the following with the person in charge (PIC):
1. Food sources are PFG, Restaurant Depot, and Produce Source.
2. The facility is treated monthly by a professional pest control company. The EHSS observed invoices for service.
3. Provide a thermometer for the chest freezer.
4. The fire extinguishes and fire suppression system were inspected in June 2014. These should be inspected annually and are overdue. Ensure that these are inspected as soon as possible.
Observed good food handling practices (handwashing and glove use) by the staff.

  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Fixed Equipment, Spacing or Sealing
    Observation: The 3 compartment sink is not sealed to adjoining equipment or walls.
    Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.
  • Good Repair and Calibration of Thermometers
    Observation: Observed food thermometer is not calibrated to ensure accuracy. It was observed measuring 6° under the correct temperature when placed into ice water.
    Correction: Calibrate food thermometer according to manufacturer's specification as necessary to ensure accuracy
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surfaces of the following equipment has accumulations of grime and debris:
    1. Can opener,
    2. Handwashing sink,
    3. Interior of the oven and Alto Sham unit,
    4. Exterior of the ice machine.

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: The food contact surfaces of all small sheet pans is observed soiled with accumulations of grease and food debris.
    Correction: Clean the food contact surfaces of the sheet pans to prevent accumulations that may reduce heat transfer to adequately cook food and to prevent attract of insects when not in use.

Complaint inspection. Discussed nature of complaint: Approved source, Prep/cook methods and where, valid permit. Approved source: PIC indictes all food is coming from Restaurant Depot.
No violation noted during this evaluation.

Risk factor inspection. All foods within proper temperature. Need thermometer for ambient air in alto sham as no external thermometer. Probe thermometer was put into bbq. Test strip needs for chlorine as old ones had been water damaged.
