Discussed proper date marking processes and need to fix sweep on back door.

Observation: Improper methods used to thaw roll of ground beef. Thawing in container of water in 3 compartment sink.
Correction: Thaw potentially hazardous foods by either of the following methods: 1. Under refrigeration that maintains food temperature at 41°F (45°F) 2. Completely submerged under running water at a temperature of 70°F or below with sufficient water velocity to agitate and float off loose particles in an overflow. Ready-to-eat food shall not exceed 41°F and raw animal foods shall not exceed 41°F for more than four hours 3. As part of the cooking process
- Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
Observation: Concentration of sanitizer in bar dish machine too low < 50 ppm.
Correction: Discontinue use of machine until sanitizer concentration can be adjusted to be 50-100 ppm chlorine. Operator will use other dish machine in kitchen that is operating properly.
- Handwashing Cleanser - Availability
Observation: Soap & paper towels not provided at the hand washing lavatory in the grill handsink.
Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands. Also have paper towels available for proper hand washing.
- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Wall behind dish machine spray sink appears to have mildew.
Correction: Clean as needed or re surface existing wall to be smooth and cleanable.
