Mobile unit is clean. Handsink is stocked with soap/towels. Gloves are available for handling ready to eat foods. Most all foods are prepared fresh daily with very little use of leftover foods. Good hot food temperatures observed. Discussed the following with operator: implementing time as a public health control instead of temperature until "flip-top" refrigeration unit is capable of maintaining all PHFs at <=41F. Cole slaw is currently transferred from 2-door refrigerator to flip-top during peak service times. Additionally, "flip-top" refrigerator is to be moved away from wall to allow for proper air flow on compressor of unit. No violation noted during this evaluation.
