    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils, or after engaging in any activity that could contaminate the hands. Employees failed to wash their hands before putting on gloves. EHS instructed employees when to wash their hands.
    Correction: ALL food employees shall be washing their hands OFTEN especially after handling trash, using the rest-room, handling raw meats, handling soiled equipment and utensils, BEFORE putting on clean gloves, etc. Proper handwashing frequencies will aid in the reduction foodborne illness.

    Correction: All poisonous and toxic materials shall be stored to prevent contamination of food, equipment, utensils, linens, and single service items by separating the poisonous and toxic materials by spacing or partitioning.

    Correction: Ready-to-eat, potentially hazardous food that is commercially processed and held for more than 24 hours after it is opened must be clearly marked to indicate the date or day by which the food must be consumed on the premises, sold, or discarded. The day that the package is opened counts as Day 1. Food shall be held at 41°F or less for no more than 7 days. The disposition date shall not exceed the manufacturer use-by date if the manufacturer use-by date is based on food safety. Upon request, employees must be able to clearly explain the date marking system to the Health Department.

    Observation: Chlorine being applied to food contact surfaces does not meet the requirements of 21 CFR 178.1010 sanitizing solutions. Sanitizer concentration was +200 ppm. The sanitizer was diluted during the inspection.
    Correction: Utilize only chlorine that meet the requirements of 21 CFR 178.1010 sanitizing solutions when applying to food contact surfaces.

This visit was made to conduct a routine inspection. Please note the following items:
1) A Food Protection Manager (certified food manager) with their Northern Virginia food manager's card must be present during all hours of operation. Failure to have one on-site will result in civil penalties of $100-500 in the future.
2) Foods that are being cold held need to be maintained at 41F or below. This can not be achieved if you leave foods sitting above other foods in the top portion of the flip top prep cooler.
3) Review employee health policy with all employees so that everyone is aware of the illnesses and symptoms they need to report. (If employees are able to locate and communicate the requirements with the use of the EHP poster then that is ok).
4) Review proper sanitizing and handwashing with the employees responsible for wash, rinsing and sanitizing dishes. The bleach sanitizer solution shall be between 50-100ppm and employees shall wash their hands after handling dirty dishes and before handling clean dishes.

    Observation: There was no Certified Food Manager (CFM) present at the beginning of the inspection.
    Correction: It is unlawful to operate a food establishment unless it is under the immediate control of a CFM. It is highly suggested that you have more than one employee with the food manager's certification. Failure to have a certified food manager on site during ALL hours of operation including food preparation, food service, and cleaning/sanitizing of equipment/utensils will result in enforcement action.

    Observation: A small dog was observed on the premises of the establishment.
    Correction: Remove live animals from the premises. Live animals carry disease-causing organisms and can transmit pathogens to people through direct or indirect contamination of food and food-contact surfaces. (Owner respectfully asked to leave the dog outside)
