Discussed use of sinks. Set up to wash, rinse and sanitize your utensils when you begin and every 3-4 hours of operation. Maximum time limit is 4 hours. Then leave one of the front sinks for handwashing while in operation
Good temperatures, sanitizer at proper strength, unit kept very clean.

    Observation: The handwashing facility located at the unit is blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation.
