Worked with Person In Charge to correct cold holding of foods back to 41 F. Discussed employee health policy and also discussed washing, rinsing and sanitizing food contact surfaces (cutting boards, knives, meat slicer) every 4 hours (when in use) to help break possible bacterial growth cycle. Butchering area is inspected by VDACS.
Critical: Food - Potentially Hazardous Food - Cold Holding* Observation: 1)Back sandwich preparation unit appeared to be operating at 54-55 F. Most foods measured rated 55 F. Internal unit thermometer read " 55 F". 2) Prepared food items on the front display cabinet measured 44-46 F (cooked beans, chicken, cooked vegetables).
Correction: Maintain all temperature controlled for safety (TCS) foods at 41 F when cold holding. Person In Charge agreed to remove TCS foods from both locations and rapidly chill to 41 F within the next hour since these products had been in both units for the last three hours. Person In Charge agreed to have units serviced to operate at optimum cold holding temperature of 41 F or less.
Sanitizing Solutions, Testing Devices Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the of the quantenary ammonium santizer.
Correction: Obtain a quatenary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level. Note: Commercial dish machine had a corresponding chemical test kit which indicated proper sanitzing concentration for chlorine at 50 ppm. PIC agreed to order quat. test kit.
