    Observation: The person in charge could not provide a food temperature measuring device.
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.

    Observation: The nonfood contact surface of the floor of the walk in freezer has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Plumbing System Maintained in Good Repair
    Observation: Plumbing connections under the three compartment sink are leaking. The handle for the cold water at the handsink is broken.
    Correction: Plumbing systems and components shall be maintained in good repair.
  • Outer Openings - Protected
    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. There is a gap at the back door.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: Toilet tissue was not present at each toilet.
    Correction: To minimize hand contact with fecal waste, toilet tissue is necessary for hygienic cleaning following use of toilet facilities. Toilet tissue must be supplied to meet the demand

Operator to look into a larger hot water heater, Self closure device on the front door, Food thermometer, lock on the freezer unit outside, repairing the cold water handle on the handsink. Discussed employee health today. Ensure test strips are available.

    Observation: Fresh garlic and oil mixture holding at room temperature cold holding at improper temperatures
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Operator discarded during the inspection. Discussed botulism and why holding fresh garlic and oil mixtures could have the botential for the production of the botulism toxin.

    Observation: The staff is drinking from an uncovered container in the food preparation area.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles. Staff corrected during the inspection.

    Observation: Floor and wall juncture in kitchen not sealed.
    Correction: Seal floor and wall juncture in rooms where water flush cleaning methods are used.

Permit will be ready for pick up by the following Monday.
Mop sink to be installed by Monday.
Operator to provide a plan if a dishmachine is to be installed and to get proper approvals from building inspections and sewer authority.
Leaving cooling logs for the operator to track cooling methods of fillings. Please provide a copy to the heath department once processes are verified.
Coving to be installed in the kitchen with in 10 days.
Operator to obtain test strips for quantinary ammonia.
Self closure device to be installed on the bathroom door.
Reviewed employee health with the operator.
A follow up operational will be conducted on or around July 15th
