The purpose of this visit was to conduct a routine inspection. Chlorine sanitizer wiping cloth bucket: 100 ppm.
  • Wiping Cloths/Use Limitation/Wet Towel Storage
    Observation: Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
    Correction: Wet wiping cloths are to be used for wiping counters and other equipment surfaces and are to be held in a chemical sanitizer solution at the appropriate concentration between uses.
  • Lighting Intensity/ Walk-ins & Dry Storage/ 10 foot candles
    Observation: Observed that inadequate lighting was provided in the walk-in refrigerators, walk-in freezers, and/or dry storage areas.
    Correction: Increase the lighting to provide a minimum of 10 foot candles at a distance of 30 inches off of the floor in these areas.

The purpose of this visit was to conduct a risk factor assessment. Chlorine concentration wiping cloth bucket: 150 ppm. The following good retail practice was discussed during the inspection: Ten foot ladder leaned against was immediately next to patron tables poses a potential safety hazard. Relocate ladder or secure ladder to wall.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: half and half at coffee station: 45 degrees F.
    Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. NOTE: PIC voluntarily displosed of half and half.

The purpose of today's visit is to conduct a risk factor assessment inspection in conjunction to a complaint investigation received today.
EHS advised the manager to use tongs for the self-service pita sampler station.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Walk-in cooler: prepared 10/08: cooked chicken(1)(2)(3) and beef(1)(2)
    Correction: Left side-True 2dr prep cooler: cook chicken/beef mix and chicken. All items above was stored in the right side-True 2dr prep cooler yesterday and was observede by the manager not working this morning.
