    Observation: Different types of raw animal foods stored in such a manner that may cause cross contamination. Beef stored above bacon.
    Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.

    Correction: Discard the food and ensure that potentially hazardous foods for hot holding are maintained at 135°F or above to inhibit the growth of harmful bacteria. Eggs were discarded due to breakfast ending.

    Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.

    Observation: The cutting board(s) in the kitchen are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 100 parts per million when the pH is at 10 or less and the water temperature is 55°F. Dishwasher maintenance arrived to repair the dishwasher during inspection. Also the person in charge agreed to use the three compartment sink until the dishwasher concentration is corrected.

    Correction: Instruct food employees to clean their hands in a handwashing lavatory. Food employees may not clean their hands in a sink used for food preparation or utensil washing.

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 25 parts per million when the pH is at 10 or less and the water temperature is at 120°F. Invoice for dishwasher repair will be sent to inspector.

    Correction: Obtain a Quat test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: Can opener.

    Observation: The nonfood contact surface of the dishwasher and knife holder has accumulations of grime and debris.

    Observation: When tested, no sanitizer or a low concentration of chemical sanitizer was found in the sanitize basin.
    Correction: Provide Quat sanitizer at proper concentration of sanitizer and immerse or expose food contact surfaces to sanitizing solution for adequate time. Person in charge agreed to use the Quat tablets until the automatic dispenser in working properly.

    Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit. Raw bacon stored over cooked ham and raw ground beef stored over milk.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: The non-food contact surface of pans, side of stove and on the wall behind trash can has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Correction: Remove ice from chest freezer. Condensate should evaporate or drain.

    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Facility was found to be clean and organized. Many positive changes have been made to kitchen including removal of wood shelving, installation of stainless work tables.
Facility was found to be in compliance with Virginia food regulations this date.

Today is follow-up inspection.
All risk factor violations from previous visit have been corrected.
Detailed cleaning for kitchen has been scheduled.
Discussed surrendering current food service permit for building number 1 (Day Break) with administrator. Due to this kitchen in not being fully functional/operational or able to stand alone for food service preparation the permit should be surrendered. The facility is to submit in writing a request a surrender of this operating permit and a refund of 2013 permit fee to the Thomas Jefferson Health District.
If an annual food service permit for building 1 is desired at a future date a new plan review application and application for food establishment permit will need to be submitted.
The facility will be required to meet all food codes in place at that time and be approved by the health department prior to issue of operation permit.

    Observation: The nonfood contact surface of the dish machine rack(s) have accumulations of grime and debris.

    Observation: The prepared ready-to-eat (RTE) fish patty in the refrigeration unit is not properly dated for disposition. Observed pan of fish pattiesand sauces/gravies without identifying label or date marking.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

If the food is held at 41°F or below the food shall be served or sold within 7 calendar days.
