Observation: Raw shell eggs were observed being stored over ready-to-eat (RTE) foods in the refrigerator.
Correction: The operator agreed to reorganize the refrigerator so that shell eggs are not located over RTE foods.
- Food Storage - Clean and Dry Location
Observation: Boxes of bread and potatoes were observed being stored on the floor.
Correction: Elevate food storage onto approved shelving with minimum 6" legs or casters.
- Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
Observation: Cooked breaded fish were observed hot holding at improper temperatures (132F).
Correction: The operator reheated the fish to 165F and then hot held at 135F or greater. Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria.
- Temperature Measuring Devices - Ambient Air and Water
Observation: The ambient air temperature measuring device located in the refrigerator is not accurate and the digital thermometer on the outside refrigerator door is broken.
Correction: Provide a temperature measuring device that is easily readable and accurate to +/-1.5 degrees F in the intended range of use.
- Cooling, Heating, and Holding Capacities
Observation: The refrigerator was overstocked and is not sufficient in number or capacity to meet the food storage demands of the establishment.
Correction: Provide additional refrigeration units necessary to maintain food items at 41F. The operator is not able to segregate and store food properly due to overstocked refrigeration. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness.
- Non-Food Contact Surfaces
Observation: The nonfood contact surface of the stove, oven, light switch in the dry storage room, and underneath the dishwasher has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
- Floors, Walls, and Ceilings - Cleanability
Observation: Ceiling in the kitchen has not been painted where the ceiling has been repaired and is not smooth and easily cleanable.
Correction: Paint the ceiling to make it smooth and easily cleanable.

Hot water heater temporarily out of service and is currently being replaced. Hand wash sink not affected - it is on a separate water heater. Kitchen manager has been effectively mitigating the situation by serving on styrofoam plates and plastic utensils and washing all food prep equipment in 3-bay sink with water heated on stove and chlorine sanitizer solution at correct concentration - 75ppm. All food and refrigeration equipment are at appropriate temperatures. Repairs have been made to walls and ceiling since previous inspection. Administrator requested recommendation on proper sealant to use for floor.

Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a Chlorine sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
- Floors, Walls, and Ceilings - Cleanability (repeated violation)
Observation: Floor or floor covering in kitchen is not smooth and easily cleanable. Floor in kitchen is painted but does not appear to be sealed and cracks are developing which make it difficult to clean.
Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable.

Observation: Wall in dishwashing area is not maintained in good repair. Observed holes in wall.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Observation: Intake and air duct and filter are not being cleaned, replaced.
Correction: Clean intake and exhaust air ducts and change filters so they are not a source of contamination by dust, dirt and other materials.

Observation: Chlorine sanitizer being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940. Observed chlorine sanitizer concentration in wash rag bucket was too high.

Product and equipment temperatures observed to be within appropriate ranges. Dish machine is sanitizing effectively (turned test tape) Recommend applying sealant to painted floor surface to prevent further cracking and eventual peeling. New cabinets have been installed and kitchen painted resulting in area being more easily cleaned. Facility was found to be in compliance with Virginia food regulations this date.
