- Critical: Time as a Public Health Control/ Written Procedures Available (corrected on site)
Observation: The person in charge is not able to provide written procedures for the use of time as a public health control with the following potentially hazardous food item(s): Butter (71F) at the front counter.
Correction: If time only is used as a public health control for a working supply of potentially hazardous foods (time/temperature control for safety food) before cooking or for ready to eat, potentially hazardous foods that is displayed or held for service for immediate consumption, written procedures shall be prepared in advance and maintained in the food establishment and made available to the regulatory authority upon request. The permit holder should be able to describe the process to the Health Department. DISCUSSED WITH THE MANAGER ABOUT THE PROCEDURE. THE MANAGER PREFERS TO SUBSTITUTE THE PRODUCTS TO BE IN COMPLIANCE WITH THE FOOD REGULATION CODE.

The purpose of this visit was to conduct a routine inspection.
- Critical: Consumer Advisory, Disclosure Provided (corrected on site)
Observation: The following raw and/or undercooked foods are provided on the menu, menu board, table tent or brochure without proper disclosure: Egg items that are offered over easy/Meduim/undercooked.
Correction: The Consumer Advisory shall include a disclosure statement that includes a description of the animal-derived foods as raw/undercooked or identification of the animal-derived foods by asteriking (*) them to a footnote that states that the items are served raw or undercooked, or contain raw or undercooked ingredients. Discussed with the PIC. Provided consumer advisory instruction to the PIC. The board menu will be updated by the PIC (Place asterisk(*) next to the food items).
- Equipment / Non Food / Design / Easy Clean
Observation: The Beverage-Air 2-DR Undercounter refrigerator is observed with plastic film which prevents from cleaning the surgaces.
Correction: Non-food contact surfaces shall be easy cleaning and to facilitate maintenance. Remove the plastic film from the unit to make it easy to clean.
- Equipment / Good Repair / Operation
Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: American Metal Fabricators 2-DR Under Griddle (48F).
Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly. The PIC confirmed that the unit is used to hold food items temporarily during busy hours. Repair the unit and provide a service receipt to Health Department with in 30 days.

The purpose of this visit was to conduct Risk-Factor Assessment (RFA). NOTE: - A copy of time as public health control example for butter was provided to the operator. - Observed the American Metal Fabricators 2-DR was not holding ambient air 41F or below. Please readjust the thermostat or fix the refrigerator. Remove all the items from the coolers until it is fixed. - Dishwasher activated the thermolable.
- Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Butter on the line at 72F and Milk in the American Metal 2-DR Fabricators at 50F.
Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. Food items were discarded. Advised the operator to use Time as Public Health (TPHC) method for butter.

- Warewash Equipment / Cleaning Frequency
Observation: The surfaces of the mechanical warewashing machine have an accumulaiton of limescale that may decrease the effectiveness of the unit.
Correction: A warewashing machine shall be cleaned at a frequency necessary to prevent accumulation of limescale.
- Maintaining Premises Free of Unnecessary Items and Unused Equipment (repeated violation)
Observation: Observed that items that are unnecessary to the operation or maintenance of the establishment are being stored on the premises.
Correction: Remove unnecessary items, including equipment which is no longer in use, from the premises to allow for regular and effective cleaning and to prevent harborage conditions.
