Unit was brought to the Charlottesville /Albemarle Health Department for complete review. Potable water system under pressure, cook line equipment, refrigeration, electrical generator and sewage disposal system reviewed and found in compliance with applicable VDH regulations. No foods were being prepared at the time of this inspection. Operator has provided an updated service agreement for obtaining potable water and proper sewage disposal. Employee health, cross-contamination prevention, hand washing and maintaining cold foods at 41 F or less were discussed. Proper final cooking temperatures for meats were discussed. Information related to appropriate use of disposable food-service gloves was provided. Approved for a cook-to-serve menu only.
