    Observation: Sanitizing compartment of 3 vat sink, leaks. Sanitizing is
    being done in the middle sink after the dished are rinsed.
    Correction: I contacted Cafeteria Supervisor during this inspection.
    He assured me that this leak will be repaired at the
    end of the school term.
  • Lighting, Intensity
    Observation: Less than 10 foot candles of light was noted in both walk-ins.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

    Observation: Food contact surfaces of the can opener used to prepare/store potentially hazardous food items were observed soiled with accumulations of food residues.
    Correction: Clean food-contact surfaces of can opener no less than every 4 hours to prevent the growth microorganisms on those surfaces.
