Critical: Demonstration of Knowledge* (corrected on site) Observation: The person in charge failed to state the minimum cook temperatures and times for potentially hazardous food. Operator was able to show a cooking temperature chart but was unaware of the required temperatures before hand. Operator also failed to describe what the appropriate cold holding temperature was for food.
Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.
Person in Charge Observation: Poor handwashing procedures observed. The handwash sink did not work. If employees are washing their hands it is in the 3 compartment sink. Will return to see that handwash sink is operating.
Correction: Educate employees on proper handwashing and routinely monitor the employee's handwashing procedures to ensure they are effectively cleaning their hands.
Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site) Observation: Cooked chorizo was hot holding at improper temperatures.
Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria.
Temperature Measuring Devices Observation: There was no temperature measuring device located in the refrigeration units.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
Temperature - Food Temperature Measuring Devices - Provided Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.
Handwashing - Using a Handwashing Lavatory - No Other Purpose Observation: The handwash station is being used for purposes other than washing hands. It is also not operational.
Correction: The handwash facility identified above is to be used for washing hands only
Critical: Plumbing System Maintained in Good Repair Observation: The handwash sink is not operational. .
Correction: Repair and maintain all plumbing components ans fixtures.
