    Observation: Metal food containers were found stacked while wet after cleaning and chemical sanitization.
    Correction: RELOCATED FOR AIR DRYING. Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: The nonfood contact surface of the utensil rack above the 3-vat wash compartment has accumulations of grime and debris.
    Correction: CLEANED. Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

The food products on the prep line maketable units was observed utilizing time as a factor to hold both the hot and cold food items, during today's inspection (documentation and charting was available).
The facility provided a metal probe thermometer, quaternary ammonium test strips and an Employee Health policy information during today's inspection.

    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

Chlorine sanitizer in use at 3 compartment sink and wiping cloth pails tested at 100 ppm.
Observed good food safety practices is use. Posted Employee Health Policy is in place along with a solid Food Safety program.
Non-critical violation must be corrected within 30 days.

  • Ice Used as Exterior Coolant - Prohibited as Ingredient (corrected on site)
    Observation: Ice used as a medium for cooling the exterior surfaces of food is also for drink ice or used as food. Employee's drink cup was stored in the soda ice bin.
    Correction: Cease use of ice used as a cooling medium for food. Ice that has been in contact with unsanitized surfaces or raw animal foods may contain pathogens and other contaminants.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of mold and mildew or other soil on the following food contact surfaces: Ice Machine interior bin and deflector.
    Correction: Clean and sanitize these surfaces for food contact.
